As co-owner of Viridian Farms LLC and Conserva (a specialty foods purveyor based in Portland, OR) - Manuel has supplied some of the nation's best restaurants with select foods from Spain and France. With over 15 years experience working directly with chefs, (and over 20 years of researching + traveling throughout Spain,) he has an in-depth understanding of regional Spanish foods and culture from an agrarian as well as a culinary perspective. 

He began professionally carving jamón in 2013. Having undergone training from some of the top cortadores in Spain, and with a deep respect for the traditions rooted in jamón ibérico, he approaches each event as an opportunity to showcase the exceptional work of Spain's artisanal producers.

From culinary industry events, to private engagements and custom carving, his experience includes professional carving on-site for groups from 20 to 800+ guests.

  • Chosen by the Embassy of Spain’s Trade Commission (Foods & Wines of Spain/ICEX) in the USA for a variety of special events showcasing jamón ibérico, including presentations at the Culinary Institute of America, the Institute of Culinary Education, Robert Morris University, College of DuPage, NW Culinary Institute, StarChefs Awards Gala, and the Instituto Cervantes in Chicago.

  • Asked to present educational session and carving demonstration as part of a special event highlighting jamón ibérico hosted by renowned Spanish chef José Andrés at his restaurant Bazaar in Las Vegas.

  • Invited to carve jamón for guests & tasting reception for acclaimed chef Albert Adrià as part of the MeetheChef series.

  • Selected by the Consul in Charge of Tourism Affairs (Belén González del Val, Embassy of Spain, California Consulate), to represent the importance of jamón as a key element of Spanish tapas culture on live television news segments, in support of promotion of World Tapas Day events.

  • Official Cortador chosen for tasting/demo at VIP Media event for World Tapas Day USA, presented by TourSpain and the Government of Spain.

  • Invited as special guest to present Jamón Carving Demo at the LA RUTA PDX Industry Feria & Trade Show.
