...which is a travesty, since so much time and effort has gone into producing it, from the farmer in the dehesas, to the patient, watchful eyes of curing bodega masters. Great Spanish jamón such as Ibérico de bellota takes a minimum of 5 years to produce.
An experienced professional cortador de jamón is able to work with the jamón so that you can appreciate the different textures, aromas, and flavor profiles of the distinct parts of a jamón. The cortador is also highly skilled at obtaining a high yield from the jamón, so that you and your guests can enjoy it to the fullest. Carving services of whole bone-in jamón are available throughout the Pacific Northwest, including areas such as Portland, Dundee, the Willamette Valley, Eugene, the northern Oregon Coast, and Seattle. Services also available in California, when booked sufficiently in advance.
Options range from 2 year cured jamón Serrano, to 3 year Ibérico, and 4 year Puro Ibérico de bellota -- from several producers & Denominations of Origin.
