The skills required to properly carve jamón are obtained through years of practice and studying. Following the jamón's anatomical structure, working with different ages of jamón, experience with a wide range of curing bodegas & producers, and serving time/temperature considerations are just a few of the items to consider when carving. 

Even a great jamón can be ruined by improper carving

...which is a travesty, since so much time and effort has gone into producing it, from the farmer in the dehesas, to the patient, watchful eyes of curing bodega masters. Great Spanish jamón such as Ibérico de bellota takes a minimum of 5 years to produce.  

An experienced professional cortador de jamón is able to work with the jamón so that you can appreciate the different textures, aromas, and flavor profiles of the distinct parts of a jamón. The cortador is also highly skilled at obtaining a high yield from the jamón, so that you and your guests can enjoy it to the fullest. A jamón for your event is an investment, and we ensure that you will have a truly unique, memorable experience - with the authentic flavors that transport you to Spain.  

Carving services of whole bone-in jamón are available throughout the Pacific Northwest, including areas such as Portland, Dundee, the Willamette Valley, Eugene, the northern Oregon Coast, and Seattle. Services also available in California, when booked sufficiently in advance.

Options range from 2 year cured jamón Serrano, to 3 year Ibérico, and 4 year Puro Ibérico de bellota -- from several producers & Denominations of Origin. Professional Carver Manuel Antonio Recio will assist you in evaluating options; all jamones are from Spain, brought in through our importing + wholesale distribution firm, Conserva.
